Pulled chicken in the slow cooker is your best friend right now. So, so easy.
I’ve been making it once a week since the stay-at-home order began and it’s absolutely perfect. It can’t get much easier than this and my husband and kids shovel it down like they haven’t had real sustenance in days.
And it’s just chicken. Boring chicken breasts…cooked a little differently. Most picky eaters even like chicken, and most people have it in their fridge or freezer. If you haven’t had this, you won’t believe how painless it is to make.
This pulled chicken requires five effortless steps:
- Pull out your slow cooker early in the day.
- Put approx. 4 trimmed chicken breasts in the slow cooker. Turn on low or high, depending on how much time you have.
- Add your favorite barbecue seasoning, rub and/ or sauce. I use mostly a rub, and add a little sauce (More on that below).
- Let it cook all afternoon.
- Take 2 forks and pull the chicken apart. It will literally fall apart. The end.
You can use the meat in sliders, or do like my family does and pile it on our plates as-is. We like it with cajun corn, beans and rice, or tossed salad. You can cook extra chicken and make it stretch for a few days, throwing it in various chicken recipes.
There will be some liquid in the pot from the chicken when it’s done cooking. As you pull it apart, let the chicken, liquid and seasoning mix all together, combining to make the perfect consistency. If you like a drier consistency though, just drain a little of the liquid out before pulling. Important: Be sure to use your favorite seasonings, and use them liberally! I use more of the spice rub because it doesn’t have the sugar that’s lurking in many of the sauces. If you didn’t add enough during the cooking process, you can always add some more at the end.
It’s really nice to have an effortless dinner to fall back on once a week, especially if you’re cooking as much as I am right now.
Who knew that unassuming chicken could be transformed, using an unassuming slow cooker, into one of my family’s favorite foods during this stay-at-home experience? Love it.
