It’s super hot and steamy out. Maybe you just finished a skin-drenching run. Or maybe you’re lazing around and crave a cold, sweet, non-guilt-inducing snack. Then grab your blender and make this banana blender “ice cream.”
Your taste buds will disbelievingly think you’re eating something really bad–maybe even real ice cream–but no! It’s just a little fruit and yogurt.
I love making this “ice cream” after a hard, hot workout. It’s super easy, totally indulgent, and feeds my muscles with the right mix of protein and carbs I need to refuel and replenish. Plus, I don’t have to toss those over-ripe bananas–I just peel and then throw them in the freezer for later. I’ve seen many variations of this; Here’s how I do it:
Place 2 peeled, frozen bananas in the blender/food processor.
Add roughly 2/3 cup of plain Greek yogurt and roughly 1/4 cup low fat milk of your choice.
As a post-workout treat, add 1 scoop of your favorite protein powder (optional). I like OWYN because it sticks to 100% plant ingredients with nothing artificial, but there are other good brands out there.
If you wish, add a tablespoon of natural peanut butter, a handful of berries, or another healthy ingredient of your choice.
In this photo, I used a tablespoon of natural, unsweetened peanut butter (Remember, this adds about 100 more calories.) and dark chocolate protein powder. I sprinkled in a little black cocoa powder for a richer chocolate taste.
Blend until smooth. Serve immediately–you definitely want to eat this right away, before it melts.
You’ll have some left over for the kids to try–You can give them their servings before adding the protein powder. Best healthy summer snack ever.
