Cupboards Empty? Think Outside the Lunch Box.

I had no ideas for lunch today. I’m not a fan of grocery shopping, and I confess that I usually wait until the last minute to re-stock my kitchen.

I decided to throw a bunch of stuff in a bowl with some olive oil, lemon juice, salt and pepper, and see how it tasted. This is what I ended up with (tomatoes, cucumber, red onion, mozzarella, butter beans, albacore tuna). Not half bad!  And full of protein and fiber to keep me full for hours.

The point is, take-out isn’t the only option when you think you have no food.  Before you reach for that frozen pizza, look in your pantry, and get creative with combinations of healthy ingredients.  You may be surprised with the results.

Black Bean Avocado Salad

I’ve been loving this salad all summer.  So easy…so healthy (no oil whatsoever)…and so tasty!  Who says Mexican-style food has to be heavy and fattening?  It’s a great dinner side dish…but you can also whip it up for lunch in just a few minutes.  Just combine the ingredients below.  (fyi, After I cut up the avocado, I mix it up with a little extra lime juice, so that all of it is coated, to prevent it from turning brown.) 1 can black beans (reduced sodium), drained and rinsed 1 can corn, 1 cup frozen corn, or fresh cooked corn cut from 2 …
